Authentic Mexican Cooking Classes in Guayabitos
Puerto Vallarta, Mexico - Debra Triplett and Elizabeth Nunez Leon had such a great response to their menus last season, they wish to thank all of those that participated and joined in the fun.

Many of you had requests for more information, techniques and recipes, and they are doing just that! New Ingredients, in-depth information, more techniques and some of the traditional favorites in new ways. They are looking forward to a great season!

New and exciting changes for this Season:

• Class size is limited this season to twelve students per class.
• The bar seating arrangement with a new central work and demonstration area gets you close to the action and encourages participation.
• Friday classes, two per day, with a morning class at 11:00 am and an afternoon class at 3:00 pm.
• Class times vary between one and two hours.
• Go home with a complimentary gift and delicious recipes with each class!

• NEW! Private Classes! A new option for 'dinner out'!

Classes start Friday, November 18, 2011, and continue until March 23, 2012.

Watch & Learn! Each class will focus on a traditional Mexican entre' using the freshest local foods with additional information on ingredients, utensils and techniques. They show you fresh ingredients from start to finish.

Eat & Enjoy! Savor authentic Mexican foods that you have learned to make at home.

Bring a friend! Enjoy a fun-filled time of food, friends and learning.

Plus, each class includes one adult drink with additionals available for 30 pesos.

Some of last year's class menus included Tamales, Tortillas a Mano, Chilis Nogada, Chilis Relleno, Moles, Tinga, Enchiladas, Pozole, Guacamole, Salsas, Agua Frescas, Fajitas, Sopes, and Pescado Serrandeado, all made before your eyes with the best and freshest ingredients available in our bountiful Jaltemba Bay area!

Sign up for a Series of 6 classes or pick and choose single classes. The series of 6 classes is 2,400 pesos ($220 US), and the single classes are 450 pesos ($40 US).

Registration starts now and class size is limited to 12, so don't wait to reserve your space.

Morning Class at 11:00 am, Afternoon Class at 3:00 pm.

Series 1 - November 18, 2011 to December 23, 2011.

1. Friday November 18 - Fresh Local Market Overview: Identifying Local Ingredients! Tastings!
Chilis, Cheeses, Fruits, Vegtables. Come learn about and taste the local Produce, what it looks like and how to cook with it.
Chiles: Guajillo, Ancho, Arbol, Poblano, Habanero, Jalapeno, Serrano, Guero, Pasilla, Chipotle, Mulato,
Cheeses: Panela, Queso Fresca, Queso Anejo, and Jocoque and more.
Fruits and Vegetables: Chayote, Guayaba, Yaka, Jicama, Tomatillos, Plantains, Tunas, Nopales, Pineapple, and the secret to onions.
Condiments and more: Achiote, Beans, Hojas de Platano, Mexican Chocolate, Piloneillo, Pepitas. Cuitlacoche.

2. Friday November 25 - Burritas de Pollo.
Tacos, tacquitos, burritas and their 'wrappers'. Learn about the similarities and differences.
Includes delicious side dish/es with take home recipes!

3. Friday, December 2 - Chilis en Nogada
Focus on poblano chilis, get some delicious recipes that use one of our favorites: Poblano Chilis!

4. Friday, December 9 - Camerones a la Coco
Shrimp - What to look for in shopping locally. Where to buy the best!
Includes delicious side dish/es with take home recipes!

5. Friday, December 16 - Pechuga de Pollo Rellenos (Chicken breast rolled and stuffed).
Buy chicken locally from the "Chicken Lady" with confidence!
Includes delicious side dish/es with take home recipes!

6. Friday, December 23 - Crepes a la Mexicana, a Trio of Squash blossom, Huitlacoche & Chocolate Crepes.
Criollo Cooking! A look at traditional European preparation with New World ingredients.
Mexican Sparkling Wine! A taste of champagne done the Mexican way!

Series 2 - January 6, 2012 to February 10, 2012.

1. Friday, January 6 - Meat and Fish Market overview with a local Carnicero & local Pescadora.
Learn about bistek, arracharra, pork, lamb, dorado, huchinango, pulpo, and much more. Information to make you an informed local shopper! Tasty Samples!
Includes delicious side dish/es with take home recipes!

2. Friday, January 13 - Birria.
Birria is a delicious meat dish in the tradition of hearty European winter fare.
Red Table Wine Tasting. Try some locally available value Reds!
Includes delicious side dish/es with take home recipes!

3. Friday, January 20 - Pescado Serandeado and Pescado Wrapped in Banana Leaves.
Pescado Two Ways!
One as Betty's special Serandeado and one Wrapped in Banana Leaves.
Includes delicious side dish/es with take home recipes!

4. Friday, January 27 - Tacos Doblados (3 different fillings for a different kind of taco).
What else can you fill a taco with? Explore the traditional and not-so-traditional fillings.

5. Friday, February 3 - Camerones de Rellenos (Shrimp stuffed with cheese and wrapped in bacon).
Includes delicious side dish/es with take home recipes!

6. Friday, February 10 - Enchiladas rojo y Enchiladas suizas.
Learn the secret of great enchiladas rojo and suiza.
Enchiladas rojo was one of our favorite classes last year!
Includes delicious side dish/es with take home recipes!

Series 3 - February 17, 2012, to March 23, 2012.

1. Friday February 17 - Tamales!
Starting out with and back by popular demand: Tamales!
This is a ‘hands on’ class and will feature tamales done traditionally and with new and exciting ingredients.

The remainder of the Series 3 menu will be coming soon.

Or, reserve your private class to design your own menu and schedule a time.
